How do you make your venison jerky and trail bologna?

My husband is a huge deer hunter! We've been processing our own deers for 3 years now but it seems I can never get the trail bologna to taste just right. Also I'm out of the pre-made seasoning packs for the ground burger jerky so I could use some new recipes for that as well. If you have any ideas...let me hear them! We are up to trying just about anything!!!
